Fried Zucchini

    Fried Zucchini

    I sort of followed the Eggplant Parmesan recipe from a few days ago.

    Zucchini (about 8 inches long)
    2 eggs
    1/4 cup water
    Grated parmesan cheese
    Mrs. Dash Garlic and Herb seasoning
    Olive oil

    Using a large heavy skillet, pour enough olive oil to cover the bottom, heat on med, watch so not to burn. Beat eggs and water. Slice zucchini 1/4 inch thick into beaten eggs. Stir to coat well. Pour about 1/4 cup of cheese onto a small plate and mix in the seasoning. Dip zucchini slices into cheese, shake off excess cheese and place slices into skillet, fry until golden brown, turn often.
    Dip into a little ranch dressing if desired.

    Ooooh soooo goood!

    I figure 4.5 g. for all the ingredients, but you don't actually eat all the eggs, and oil. I guessed at 3 for what I ate. My husband really like them too.
