    Rico's Version of Mashed Cauliflower

    I improvised and made my own version of mashed cauliflower last weekend, and it turned out awesome and was easy. Makes about 4 Rico sized servings. Thought I'd share.

    Boil or steam 1 large head of cauliflower

    Mash and drain all excess water

    Mix in the following:
    1/4 cup of diced onions
    3 tbl spoons of sour cream
    3 or 4 "shakes" of Lawry's Seasoned Salt

    Top with 1 cup of sharp cheddar cheese

    Cover with foil, and put in oven preheated to 350 degrees for 15 minutes.

    The sour cream is a good idea...bet it gives them a bit more body then using heavy cream....

    Good call! That's exactly why I used the sour cream Pirate! The whole mix holds together very well, just like potatoes. The heavy cream remains unopened in the fridge... Rico

    Good call on the sour cream! Never considered the properties of sour cream vs heavy cream in a mix like this. Thanks for sharing!

    Rico!!

    I tried this for breakfast today! YUM!

    I made a couple of changes (couldn't be bothered chopping up the onion lol)..

    I used a packet of frozen cauliflower and boiled it until soft with a vegetable stock cube..

    I set the water aside (soup for later!!).. and added a tablespoon of butter.. then added some sour cream.. mashed and mixed well.. then added a little parmessan cheese on top...

    This recipe is definately a keeper! My husband loved it! who wants to spend time peeling potatos when there is a tastier alternative anyway??

    I really don't like cauliflower....does it taste like cauliflower or do you just taste the spices and cheese, etc?

    To me is tasted just like mashed potato but with a stronger flavour.. but for me it has been a while since I have had some mashed potato lol
