    Finishing up the burger patties and have been inspired by you, Zero. Tomorrow night will have chicken thighs liberally sprinkled with Cajun seasoning!

    Made some comfort food for Saturday supper....
    It was cold, snowing like heck, damp, and windy........... Typical Remembrance Day weather..

    I made a meatloaf.........
    I used minced turkey and added mushrooms, eggs, herbs and spices..
    It was delicious but unfortunately I have some leftovers.. Last time I made a meatloaf, the leftovers found the garbage bag.. This time, I will try to use the leftovers, somehow..
    Steamed cauliflower with parsley flakes was the veggie..
    S/F jello with heavy cream
    Pot of tea....
    I used to live to eat......... Now I eat to live.....
    Even a Fish wouldn't get into trouble if it would only keep its mouth shut..

    Arlene, yea the cajun pairs so well with chicken! A combo I love

    Steve, how about individual portion sized meatloaf. Just use enough meat for one portion size per person that you would normally eat, balance out the rest of the ingredients to fit that meat size and just cut in half and feed both of ya? Might work for you.

    Problem is when I buy minced meat, it comes in 450g packages which is one pound.. I usually buy several packages at one time and freeze them.. When It goes on special, I buy 10 minced chicken and 10 minced turkey..
    That (one pound) makes quite a large loaf which is way too much for 2 people especially when I add some freshly chopped mushrooms, 2 eggs, herbs and spices to the mixture..
    I very often make my meatloaf in muffin tins to make individual and small ones.. I end up with leftovers in any case.. I tried freezing leftovers and found they came out watery and not as good tasting as freshly made.. I tried a sauce over it as well and that didn't work either..
    Very often, our dog gets a treat of meatloaf, but that isn't the best idea either, as the poor pooch is gaining weight as well..
    Can you recommend low carb for dogs as well ??? Perhaps I should put the pooch on induction for a few weeks to lose some weight, after all, she only weighs 6 pounds.. A Pomeranian..

    Speaking of induction, my wife, Annmarie, who is on induction for the past few weeks, has lost 20 pounds so far.. She is so happy and would like about another 5 pounds down before her ankle replacement operation on the 12th of December..
    Her numbers for diabetic have improved drastically.. She is so low and concerned, that she has an appointment with her diabetic specialist very soon to find out what to do..

    It must be my cooking that did it.. I really went all out to make sure she didn't eat anything she shouldn't on induction..

    Ditching carbs can sure change diabetes (type 2) numbers fast. Less meds or NONE. So happy for her doing so well!

    Yea Steve you have to portion out the meat from the big packs you buy. I do now. I buy a 4 pack of ribeye and get 2 freezer bags and put 2 in each bag. I figure spend the money on the freezer bags to portion out the meat, or take that risk of throwing meat in the garbage and wasting money that way. I opted to put the buck on the freezer bags and not in the garbage bin


    today I have 3 NY strip steaks
    1 later with maybe come bacon for brunch
    got 2 nice steaks for dinner

    family doing spaghetti and meatballs

    how in the heck can you eat more than one steak at one time..
    Each steak is about 3/4 of a pound and that's a lot of food.....
    Unless I am misteaken about the size of the steaks..
    I used to live to eat......... Now I eat to live.....

    Steve these are the thin cut steaks I bought. Not a fat NY strip, there are a skinny NY strip. I buy different cut sizes so if I say I am eating 2 steaks it isn't as much as you might think. My 3 pack of thin cut strips totaled 1.25 lbs. for all 3. Which is not alot of food so I put in bacon or shrimp or something else with it actually.

    I was wondering about that.....

    Tonight for supper I made something I never made before..
    A homemade pasta sauce made with minced turkey, ton of mushrooms, diced onions, jar of Classico cheesy pasta sauce, small can of diced tomatoes with the juice, herbs and spices.. I cooked it for over one hour and added some stock as it got too thick..
    The secret herb I used was a very small pinch of mint in the sauce.. It gives a lovely flavour without the taste of mint..
    I cut a spaghetti squash in half after microwaving it for 5 minutes, emptied it, added some EVOO, and baked it in the oven upside down for 40 minutes at 400f..
    Scraped the spaghetti squash on a plate and served with the pasta sauce.. Each half a small squash..
    My dear wife wants me to make this at least every other week as it is sooooo good.. We ate like real pigs.. finished everything..

    oh yea if I eat one of the big old fat steaks, that holds me very well, and only 1 is needed




    today is ribs.

    in the oven now.

    3 lb rack. ALOT of bone there. So if I eat the whole thing how much meat vs. bone weight there?

    I will eat the whole rack and probably eat a bacon/cheese omelet later for dinner time cause a 3lb rack of ribs won't hold me.


    That is like with crab legs. 1 lb is alot of shell weight. So I need 2-2 1/2 lbs of crab legs to make me happy.


    ahh, the ribs are smelling great and can't wait but still got alot of cook time left, plus the oven is helping heat the house.....brrr outside

    ribs were delish and have 1/4 rack to finish off today with a bacon/cheese omelet

    dinner, hmm, chicken thighs or maybe defrost some ribeyes? will pull something out the freezer
