    Crustless Quiche

    Crustless Quiche

    Dozen large or jumbo eggs
    2 cups heavy cream
    2 cups shredded cheese (cheddar, swiss, mozzarella, monterey jack etc)
    1 to 2 cups of cooked meat (bacon, sausage, spam, ham etc)
    chopped onion to taste (optional) - (remember the carbs!)
    broccoli or other cooked veggie (optional)

    Whip up the eggs and cream. Fold in other ingredients. Pour in a 9x13 inch pan. Or do what I do and pour in a large muffin pan (makes 12 muffins). Either way use cooking spray first or butter the pan. Bake 20 minutes at 350 degrees or until cooked through (a little longer if in the 9x13 pan). This freezes exceptionally well, just nuke in microwave for 90 seconds or so. Make a batch on the weekend for quick and easy breakfast during the week.

    I use glass lasagna pan and cook at 350 for 35 minutes.. let cool before cutting.

    It makes 12 servings? And they are freezable? I will have to try it. Thanks.

    yes they are freezable - after it has completely cooled. I cut into 12 servings, sandwich wrap each one and then place in a freezer bag. I take one out and microwave for 90 seconds. Pretty handy to have for those mornings!

    I was able to make 24 muffin size last night. They are delicious!! I am eating one right now. I mixed the egg and cream, pour into each tin, then added cheese, and either ham or bacon, green pepper, and chopped leeks. I also made some with broccoli and bacon. I did it that way because some of my kids each broccoli but none like green pepper or onion. But I do ! Thanks Northern Lady!!

    Thanks NorthernLady, I'm not very adventurous in the kitchen, but even I managed to make this one :P and it tasted really good.

    additions

    I love quiches. I've never tried without a crust. I like adding black pepper and grated fresh nutmeg.

    Hello.....

    Never really had quiche before but I tried this recipe last night and let me tell you......my muffin pan holds 12 so after I made the first batch me and my two daughters (ages 11 and 6) tried them out and before we knew it we were down to 6 and this was after we had already eaten dinner :P

    Anyway, I had enough mixtue to make 12 more. I put some in the freezer but I just had to bring some to work today to share with my co-workers. They are not on the diet but they loved it and asked for the recipe.

    These are awesome...... easy, fast, and they are delish!!!!!

    I had the same problem with the muffin pans. By the time I put in my veggies and the like, I ran out of room in the pans so I had to dump everything into the 13x9. What a mess!

    The pan worked great and I got large squares that I have since frozen after individually wrapping them. I eat them with a few slices of pre-cooked bacon that you can buy sometimes. It's a delicious recipe, very handy and can be modified with all kinds of meat, cheese and vegetable combinations.

    I wanted to push this to the top of the list for all of the people out there looking for a new breakfast variety. This is a fabulous dish. I am sick and tired of eggs, and this hit the spot. THANK YOU NORTHERN LADY OUR RECIPIE GODDESS!!!

    What is the carb count for 1/12 of the pan (sans veggies)?
