Basically an omelette.. I make omelettes most mornings and almost every one is different..
Start with 4 eggs (for 2 of us)..
Whisk and add a few drops of tabasco sauce.. Add your favourite herb such as parsley, chives or whatever you like.. Add about the equivalent of 1/2 egg of cream.. Whisk and add to a well greased fry pan.. Either scramble or let sit till caught and then place under preheated broiler till golden..
    OPTIONS....
Fry diced onion and add eggs to caramelized onions..
Add diced peppers or any veggie you like..
Eliminate the herbs and tabasco and add fresh or frozen berries..

The options are limitless.. Experiment and have fun as you enjoy eggs for breakfast every day .....
I used to live to eat......... Now I eat to live.....
Even a Fish wouldn't get into trouble if it would only keep its mouth shut..

hi, its eggs for me too, i make a large thick crustless quiche on a sunday and cut it into wedges. it keeps well in the fridge for 3 or 4 days, i and have it with my coffee in the morning ( sometimes just have it cold, in the car on the way to work if i am running late) with some mashed avacado on the side, it fills me for hours. Eggs are the one food i never tire of.

Left overs from the day before -- I love eggs and bacon -- Hamburger patty with onions--

I don't eat "breakfast" I eat a brunch between 10 and noon. Start my day with several cups of coffee and heavy weight cream.

i often have a coconut cream and protein shake first up to keep me from having hunger-crankiness with my kids - then it's coffee and something heavier later at work- like eggs or bacon and eggs, or the burger, or oopsie rolls with ham and cheese, or tuna salad, or..or..or.. etc!

i must say i do it in 5-egg batches...i use
5 eggs, separated and room temp
    bit of cream of tartar
5 tbsp of mayo (not generous tablespoons, just level)
    no sweetener or anything else

whip those whites to a frenzy with the cream of tartar (til very stiff)
then beat the mayo and yolk
fold yolk mix into whites til combined (carefully!)
blob them into 10 flatish blobs on baking paper on a cookie sheet
bake at 150C for 35 to 40 minutes

you'll get to know how well don'e you like them - i find that undercooked is slightly better as you can always zap it for 10 seconds in the microwave to stiffen it up a bit more, but once it's overdone - it is dry and powdery and useless.

they keep for like a week in the fridge and can be frozen too.

very, very nice with ham and cheese (TIP: butter the cheese, and not the oopsie roll; they are hard to butter - or with any other sandwich ingredients..or as a damn good hamburger bun too - or sausage-roll-..ororor you name it really.

Hard boiled eggs with 2 slices bacon.

I put a dozen eggs in the Instant Pot and cook them on low pressure for 6 minutes, quick release and into an ice water bath. Each morning, I put 2 slices bacon in the microwave for 2 minutes. I peel and chop 2 or 3 eggs, add salt & pepper, the fat from the bacon, and the crumbled cooked bacon. Nuke for 30 seconds to reheat (or longer, as necessary.) When boiled in the IP, the eggs peel perfectly every time, (unless your egg supplier oils their eggs!) The pressure cooker loosens the shells so they practically fall off.

Great breakfast. I have the hardest time peeling eggs sometimes. There are a lot of suggested ways to cook and peel them, but the best for me so far is the ice bath after boiling.

My favorite breakfast is banana pancakes. I love this recipe and found about it from the guide régime available on the internet. Now, I have started taking a full glass of fruit juice with the pancakes for breakfast. For today's breakfast, I had bread and butter.
