    Pork Roast and Sauerkraut

    Here is a quick, easy and delicious way to prepare a rolled pork roast.

    I buy a 2 -2 1/2 pound rolled pork roast. I brown it in a little Extra Virgin Olive Oil in a cast iron pan on top of the stove. I then slit parts of the roast and insert a couple of garlic cloves which I slice. This is optional.

    Preheat the oven to 350 degrees and in a roasting pan put one jar of Sauerkraut. I buy various kinds such as Bicks and sometimes make my own recipe.

    I wrap bacon pieces around the roast which adds extra flavours and moisture to the meal.

    Place the browned roast on top and add any spices you enjoy such as black pepper, rosemary, thyme etc.

    With a lid on cook for 1 1/2 hours. Let stand for 15 minutes before serving.

    I usually serve this with a salad and broccoli. It is good enough for company and my family loves it.

    Dietary Fiber: 6g
    Net Carbs: 4.1g

    FUNNY!!!!! I had this meal planned a week ago! However I am doing it in a slow cooker, on low for 9 hours. I was not planning on adding bacon, because I am doing a green bean, bacon , cheese thingy for our vegs. Next time I will!

    Great minds think alike! LOL! Can I come to dinner next week?

    I just love SLOW COOKER meals if you have any other recipes, I would love to have them.

    Thank for the links Arlene. I already have one of Dana Carpender's low carb recipe books and it is excellent. I will be buying the Slow Cooker recipes. They are so easy to prepare ahead of time and delicious! Thanks again. Appreciated.
