    Post chicken curry

    this is my fave curry atm

    - 2 large chicken breasts diced
    - 1 garlic clove chopped or crushed
    - 1 3cm stick of ginger chopped fine
    - 1 lime
    - 300ml double cream
    - 1 onion
    - half a red chili (or a whole 1 if u like it spicey)
    - 1 tbs mild chili powder
    - half cup of coriander chopped fine
    - 2 tbs olive oil
    - 1 large cauli head
    - 1tsp tumeric

    stick the the diced chicken in a serving dish and add the garlic/ginger/coriander/half the lime juice/1 tbs chili powder/1 tbs olive oil and mix well until all the chicken is cotted. set to 1 side

    grate the cauli head into a large microwavable bowl with a cheese grater (or however you prefer to make cauli rice) put it in the micro with a plate on top (dont turn it on yet).

    get 2 pans on a highish heat, chop your onion and chili and add to 1 of the pans with 1tbs of olive oil. at the same time add the chicken mix to the other, after 5 min of stirring often add 1 tsp of tumeric to the onion/chili pan and mix well..at this time turn your micro on to 5-8mins depending on the size of the cauli head. simmer the onion/chili/tumeric mix for 1-2min then add the double cream and mix well, turn the chicken pan heat down...after a minute of adding the double cream pour the onion/chili/tumeric/cream pan into the chicken pan add the other half of the lime juice and mix well! simmer for another minute

    ping! cauli's done. serve and enjoy


    ....i sometimes use a wee bit more than 300ml double cream
