    hi again y'all - i am currently cookng some oopsies (how could i have forgotten about these little gems?!?!?!) - and will have a burger for dinner when they are ready and set. and probably one for breakfast tomorrow too!

    also had some lovely hot pepperoni chips today with sour cream/mayo/thai seasoning dip. yummyo

    i didn't have enough veggies today, but yadda yadda whatever.

    hey has anyone had distilled water to drink before? my dh bought some to clean his telescope mirror and we had a ton left over so i've been drinking it up. it is so....tasteless. it's amazing - what you would think water *should* taste like - no flavour at all. i told the kiddies it's "garden of eden water" i do like to know there;'s a bit of flouride in my water though, so i won't be buying distilled for my everyday drinking. not to mention i have taken back the tap - enough of buying filters/bottles/etc. such a waste, when my own tap water is fine. not everyone's is, i know, but ours is, so i'm drinking it!

    have been off track again lately - don't know what it is - but i am now detting a goal of 2 weeks at a time. "i can do anything for 2 weeks" is my new slogan.

    Good to hear from you and love the new slogan! We are luck and have amazing tap water here in town and at our house we have well water which is even better. Can't say that I have ever drank distilled water. Hubby uses it in his CPAP machine though.
    What is an oopsie burger? That dip with the thai sauce sound delicious. MMMMM I'm hungry now LOL

    3 large eggs
    1 pkg Splenda
    dash of salt
    pinch of cream of tartar
    3 ounces cream cheese (not Tbsp!) Do not soften!

    Preheat oven to 300 degrees. [edit: 300 deg F or 150 deg C]

    Separate the eggs and add Splenda, salt, and cream cheese to the yolks. Use a mixer to combine the ingredients together. In a separate bowl, whip egg whites and cream of tartar until stiff (if you're using the same mixer, mix the whites first and then the yolk mixture). Using a spatula, gradually fold the egg yolk mixture into the white mixture, being careful not to break down the whites. Spray a cookie sheet with non-stick spray and spoon the mixture onto the sheet, making 6 mounds. Flatten each mound slightly.

    Bake about 30 minutes (You want them slightly softer, not crumbly). Let cool on the sheet for a few minutes, and then remove to a rack and allow them to cool. Store them in a bread sack or a ziplock bag to keep them from drying out.

    Makes 6@ about 85 calories a piece, >1 carb per

    I love the two weeks at a time as a goal. It is something to focus on and not impossible to imagine.

    I gave up drinking filtered or bottled water long ago when I saw water vending machine (one you fill your own gallon or larger bottles at?) and the faucet that was covered by the door of the machine when closed, was GREEN! It was not supposed to be GREEN! Okay, my tap water is cheaper and fine. Yes, I agree, it tastes good too! I don't like tasteless water.

    My family has a Brita filter that they use when they visit. Oh well.

    I have not tried Oopsies yet, have not missed bread. I did make two MIMs tho, one with coconut flour (looks very strange, did not rise but smells just fine...I am going to eat it for lunch) and one with almond flour I will eat tomorrow. I like the MIMs but don't need them, just use them for a variety.

    Muffin in a Minute (suitable for Induction)

    Serving Size: 1

    1/4 cup flax meal
    1/2 teaspoon baking powder
    1 packet splenda packet
    1 teaspoon cinnamon
    1 large egg
    1 teaspoon butter

    Put the dry ingredients in a coffee mug. Or a bowl for a different shape.

    Stir.

    Then add the egg and the butter. Mix.

    Microwave 1 minute (or more). Take out. slice, butter, eat. Set mug to soak immediately.

    Cream cheese would go nicely, too.

    Notes: 1.5 net carbs.

    Per serving: 235 Calories; 18g Fat (63% calories from fat); 12g Protein; 11g Carbohydrate; 9.5 g. fiber; 223mg Cholesterol; 284mg Sodium

    ah well done ladies - you got in and posted the recipes for me!hey - something i've discovered that is really easy to do is "flax bread" - which is the muffin in a minute, but it's spread out and then you cut it into squares - much more like bread than the MIM - i love it toasted with natural peanut butter http://video.about.com/lowcarbdiets/...Bread.htmsadly i can't do almond meal - it shoots up my blood sugar and makes me starving and cranky - i love it though....but just can't do anything almond-mealy t

    Thanks for the recipes ladies. I will have to try Oopsie Bread. Sometimes I just want a little toasted something with my eggs.

    I drink both Brita filtered water and from the tap! I find it easier to drink water which is not too cold.

    Little Jane is home and I will be making some favourite casseroles today....one less thing for mommy to worry about doing!

    hi all i know it's been months. anyway i have just discovered that australia FINALLY has shirataki noodles for sale at a (pretty) reasonable price! i ordered 4 packs and can't wait to try them with a stir fry, our my meat-sauce...or anything!

    had heaps of oopsies today - so good - but for toast, i would use the flax bread....
