    Breakfast Flax muffins

    Breakfast Flax Muffins

    2 cups flax seed meal
    1/2 cup splenda
    1 Tbsp Baking Powder
    1 tsp salt

    1/2 cup water
    1/3 cup oil
    5 eggs
    1 tsp vanilla

    Directions:
    Mix dry ingredients together, set aside.
    Mix wet ingredients in blender.
    Mix all together.
    At this point, nuts or low-carb fruits may be added. (Add cinnamon or other spice into dry ingredients if desired.)

    Spray, grease, or line muffin pans with paper liners.
    Fill almost to top. Bake at 325 F for 15 minutes. Makes 12.

    We like to put one into a mug, and add diluted cream and a dash of sweetener for "cereal." Very filling!
    Each muffin gives you as much protein as as almost 2 eggs, plus lots of healthy fats, and 5 grams of fiber. Good for you!

    By the way, if you add just a bit more water, it makes very good pancake batter.
