    Delicious Sweet Creamy Treat

    I've been pretty good eating between 20-30 grams of carbs per day. With Halloween coming there is candy everywhere. I've been having strong urges to take a break from this low carb lifestyle. I really don't want to sabotage my efforts. There are many things that I enjoy about low carb. One of them is CREAM. Costco sells it for about $8 per half gallon. It's made of pure fatty goodness. When I ate raw for a spell, I was introduced to CHIA seeds. They are the same seeds used in the pets. They are VERY nutritious (http://nutritiondata.self.com/facts/...roducts/3061/2) and has nearly as much fiber as it does carbs. When soaked it has the texture similar tapioca. It can be purchased in bulk at health food stores. I joined this forum becuase I need support for ongoing weight loss and continuing on this path that I believe in but isn't always easy and I wanted to share my delicious treat recipie.

    1 cup of pure heavy whipping cream (or desired amount)
    1 table spoon of Chia seeds (for texture, fiber, vitamins and flavor)
    1/8 teaspoon pure vanilla
    1 packet of Splenda (could have used less).

    Pour the cream in your bowl first. Then add the chia seeds. This is important. The seeds are very small but expand 9 x their size absorbing the liquid from the cream. Stir it every 30 seconds or so. You could place the bowl in the freezer in between stirs. In about 3 or 4 minutes the chia seeds will have expanded. Add your vanilla and splenda to taste and enjoy. I hope you enjoy it as much as I did. It tasted exactly like vanilla ice cream. It was a VERY satisfying guilt free experience. And I'm still legal. I don't ingest much fake sugar but every now and then I will when I'm craving sweets.

    Be sure to calculate the carbs... 1 cup heavy cream has 6g!

    Not sure how you measure 1/8 of a teaspoon, either... in drops??? LOL Anyway, 1 tsp of vanilla extract has about .5 g carb.

    1 packet Splenda is 1 g carb.

    1 oz chia seeds has 1 ng carb.

    So... while still low carb, it may not be as low as some would assume. This recipe makes one serving at 8 to 8.5 grams carbohydrate. None of which come from vegetables, so it's really not appropriate for Induction.

    ain't necessarily so!

    Very heavy whipping creme, the kind you pay two dollars extra for, has NO carbs. Also, while chia has 6 carbs per tablespoon, it has a negative glycemic load/index. It not only will not convert to glucose, but it will also lower the glycemic load/index of other carbs you eat!!!!! I have been using it a lot! It also adds omega 3 fatty acids to your diet and fiber to draw water from your body and keep your lo-carb bowels functioning!

    chia also lowers blood pressure (important if you use saccharin-- because of the high sodium content of saccharin) .
    it also has the perfect amount of magnesium and calcium-- enough to prevent osteoperosis!

    Heavy whipping cream, in a serving size of 1 or 2 TBS has "no" carbs (too small to matter)... but in a cup (which is not a serving size!) it does have carbs. It has lactose, which is a carbohydrate/sugar.

    In 2 tbs servings, negligable to no carbs, perhaps some in larger amounts, but the kind I get is almost all milk fat. Lactose intollerant people can mix it with water and enjoy it like milk! Would you happen to know the glycemic values of lactose? When I go to maintainence I'm switching from low carb to low glycemic and getting lots of daily excercise! Thanks!

    I made this dessert today and loved it! i am impressed. thanks for introducing these seeds to me as i have not heard of them before so had to quickly go to the shops to get them as they sounded too good to be true!

    Not only that, the seeds contain b-17 which fights cancer.
