chicken breast or thigh meat (whichever you prefer) cut into chunks or strips (I flatten mine out a little otherwise if you try and do like a whole fat breast or something the parmesan may burn before the chicken inside is cooked), roll into cream, roll into grated parmesan cheese (I mix some cracked black pepper in with my grated parmesan, no salt needed AT ALL parmesan is salty enough!), place on baking tray and bake in the oven till brown and crispyremove from oven, allow to rest and they will crisp up upon 'resting' a little. Moderate oven temp, not high not low.
