    Need an apple recipe please

    I've just picked loads of eating apples off my trees that have grubs in so I need to use them up as they won't keep. I know apples are not strict low carb but I am 'in maintenance' as it were so I can splurge out a bit. As they are eating apples I shouldn't need to add any sugar but what can I make with them? I don't want to use wheat or grains if I can help it and want to keep the carb count as low as possible while still making a dessert. Any ideas please? Thanks

    I made this for my diabetic mother-in-law. It was lovely !

    Apple walnut 'caramel' cake.

    Total Net Carbs: 74
    Per Serving: 6.63

    Ingredients


    • 8 ounces cream cheese
    • 1 cup butter - softened
    • 4 eggs
    • 1/2 cup Vanilla Sugarfree Syrup
    • 1 teaspoon vanilla extract
    • 1 tablespoon lemon juice
    • 1 cup SplendaŽ Granules, Maltitol or Diabetisweet
    • 2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 3 cups almond flour
    • 1 cup tart apple, peeled and diced
    • 1 cup finely chopped walnuts (optional - garnish)
      caramel sauce- (optional)
    • 1 cup Brown Maltitol or Brown Diabetisweet
    • 1/2 cup heavy cream
    Directions

    • Combine wet ingredients together in a blender until smooth. Mix dry ingredients together and then fold in wet ingredients. fold in apples and walnuts. Pour evenly into baking pan. Bake for 50-60 minutes or until toothpick inserted in center comes out clean. Cool in pan on a wire rack for 15 minutes, then invert on a serving plate.
    • While cake is cooling, make caramel topping by combining brown sweetener and heavy cream in a small sauce pan. Cook, stirring constantly until it comes to 240°F (soft ball) - I did this by 'eye' and decided when it was 'thick' enough . Remove from heat and allow to cool slightly. When topping is cooled down, drizzle over cake. Garnish with chopped walnuts.

    it's low compared to most 'normal apple cakes', FlorayG stated she was on maintenance. You could use the recipe as a 'guide' and reduce or remove some things and play around with it. Like I said the 'caramel' sauce is optional. As stated, I made this cake for my mother in law for her Birthday. I've made others in the past for her but this was definately the best tasting by far.

    Yes that looks great thank you Jordy I'll try it - Bluehex I don't really go much for apple sauce, but good idea anyway. I'm working on a low-carb barbeque sauce but I can't find the carb count for Worcestershire Sauce can anyone help?

    Hi Jordy,

    I immediately think of an apple pie when it comes to apple recipes. Yours is something I really have to try. Thank you for sharing.
