Does anyone know why so many atkins recipes call for canola oil in addition to olive oil? Have always used olive oil and like it but i notice that it is usually used in addition to canola oil. Any reason I can't just use olive?

NO reason except many people don't like the taste of olive oil and also canola is cheaper. Olive oil is much healthier so keep using it I would say
