    easy egg 'omelet'

    Put allowed veggies in the bottom of a microwave bowl. Cook for 1 minute. Add an egg, cook one more minute. Add chopped ham and shredded cheese and cook one more minute. Add other ingredients if you like. It is delicious. Enjoy!

    Sounds good! I love eggs and eat them pretty much every morning, but I never thought about putting them in the microwave. I usually cook them in a skillet. What kind of veggies do you usually throw in there?

    I saw it on one of the cooking shows the other day. I just use a very small amount of chopped small veggies. onions, green peppers, and mushrooms. You can use anything you like or that is allowed. Enjoy

    hmmm, i have bagfuls of slices of peppers in the freezer -they were on special, so i bought up big, cut them into strips, and voila! ready for soups, to mix in with spicy ground beef, or...your omelet!
