My cole slaw...
One bag cole slaw mix (or shred half a med cabbage yourself)
1/2 cup mayonnaise
2 TBS rice wine vinegar (not the seasoned stuff)
1 tsp black pepper
1 packet Splenda
1 tsp salt
1 tsp paprika
ground red pepper to taste
If you like it tangy, add more vinegar... if you like it sweeter, add more Splenda. I don't premix the dressing. I put the cabbage in a big bowl and make an indentation in it. The I put the mayo on top... and top that with the S&P, splenda, paprika and red pepper. Stir this into the cabbage.
Mayonnaise
Place everything but the oil and lemon juice in the blender or processor container. Process 5 seconds in the blender; 15 seconds in the processor. With the motor running, add the oil, first in a drizzle, then in a thin, steady stream. When all the oil has been added, stop the motor and taste. Add lemon juice to your taste. If the sauce is too thick, thin with hot water or lemon juice. If too thin, process a little longer.
- 1 large egg
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground white pepper
- 1-1/2 teaspoons white wine vinegar
- 1 cup oil
- 1 to 2 Tablespoons lemon juice
This is very much like "my" recipe (which I can't find right now!!!). I don't remember using Dijon... I used dry ground mustard. Sometimes you do it all right and it still doesn't turn our right.... so keep trying if the first batch doesn't work. If it doesn't come together... try using more egg. If you use olive oil, use the lightest version... otherwise the taste is just too strong for many uses. I like canola for everyday mayo. Oh... one other thing, I use an immersion blender in a jar. You make it in the jar and store it in the jar.
Yield: 1-1/4 cups

I just checked "Linda's recipes" and this one might interest you as well for the coleslaw. I have tried a few of her recipes and haven't had one yet that I didn't enjoy thoroughly. I cannot believe how lucky we are to have these available to us.
