OMG! I have just made a chicken curry and it was Amazing! it was that good i thought i should share.
The only thing is i free style my food so i haven't got exact measurements. I am sorry Haharrr
But here is how i did it.
Okay... So i used chicken thighs! as they are very succulent!
I cut them into bite size pieces. I used approximately 10 chicken thighs.
( put them to one side till you are ready to cook )
I grated fresh ginger. two desert spoon size ish.
Then i pealed and crushed 5 garlic cloves.
Then i chopped 1 large spanish onion.
Then i sliced 10 mushrooms
Then i chopped a bunch of coriander leaves (fresh)
Then i copped 5 large tomatoes
you will also need , curry powder I used madras ( hot ) two tablespoons.
SALT AND PEPPER TO SEASON
and food colouring ( i found a powdered one in yellow no added sugar, makes the food turn red) i guess you could use powdered turmeric if you cant find this.
I had two pans going.. in one of the pan's i was sealing the chicken thighs. stirring them until, they turned a pale colour, cooked through.
whilst the chicken is cooking,in the other pan i fried the onions until soft then i added the spices. ginger, garlic madras's curry powder. i added a little more fat to stop the mixture from sticking to the pan.
I then transferred the mixture to the chicken and continued to stir.
then i added the mushrooms, chopped tomato and coriander.
I also added food colouring (yellow) that i found from a asian food store up the street it turned my mixture into a rich tomato looking curry. you don't need too much maybe a tea spoon full. (You don't have to add this but i find it looks and tastes better lol )
Garnish with green chillies
I left the mixture to simmer for around 20 mins and stirred occasionally, then attacked!!
As you can imagine you will need a big pan to stir it all up in.
This amount of ingredients shared up into around 7 portions. I bought some freezer tubs and just banged it all in the freezer. I take one out in the mornings for work. rely handy.![]()
