    Thousand Island Dressing

    As far as salad dressings go, Thousand Island is a little carby. I love it so I created a simple and very low carb recipe. Just mix what I have below.

    - 1/2 cup of mayo (Hellmans is 0 carbs)
    - 1/4 cup of Heinz reduced sugar ketchup (1 carb per tbs)
    - 1/8 cup dill relish (not sweet, 0 carbs)

    It's not rocket science, but if you miss Thousand Island Dressing, give this a try.

    I do the same thing, only I use splenda sweetened relish. Mt. Olive makes it. Or USED to make it. I'm down to the bottom of my last jar and can't find it anymore!!! GASP!!! I think I use less ketchup than you do, though... just enough to turn it pink. Since my relish is sweet and you're isn't, that may be the difference, you're getting the sweetness from the low sugar ketchup.

    This is particularly good on my Crispy Tuna Cakes!!! Read the whole thread because there were "improvements" along the way...

    I really do just eyeball the amount of ingredients I use, so what I have above is an estimation, but not too far off. It is a little different each time and anyone making this can prepare it "to taste". The relish I used was Kroger's store brand, but didn't mention it because Krogers aren't everywhere. I need to try your Crispy Tuna Cakes!

    I've been making something similar, but for burgers -- about 1T of mayo, 1T of hot pepper relish, and about 1tsp of the same ketchup.

    I haven't thought of trying it on salads, but it makes sense...lately, I've been eating a bit of ranch dressing on salads. One of our home favorites (my kids like it too) is to make taco salads with lettuce, tomato, cheese, spiced ground beef and a dressing that is made up of ranch dressing mixed with salsa (it takes some digging to find salsa that isn't sweetened).

    I love mayo mixed with chipotle powder. It's good on fajita meat/veggies.

    i so wish we had LC ketchup and unsweetened pickle relish in this country SO UNFAIR!!!!!!!!!!!!!!!!!!!!

    i will have to load up my suitcase when i fly out of canada in march! i have a 70-pound limit...how many jars and bottles is that HAHAHa
