    Steaks?

    Show me how to cook steaks so that they come out tender and juicey. I often buy expensive steaks but they come out hard and dry. I ruin them somehow.

    How am I supposed to cook them?

    I RECENTLY learned to eat steaks "medium rare". Google for best directions whether on the charcoal grill, in a George Foreman or panini pan, or under the broiler. Some folks pan fry them quickly, as well.

    Anything more than "medium rare" cooks out ALL the moisture...even "medium." Well-done is an "old boot" - dry as shoe leather!

    Trust me...turn the lights down low so you don't see the redness...just taste the wonderful flavor! The dim lights add to the romance as well, if you are so privileged!

    dude - first - make sure your pan is not a crappy thin one - if it is, the pan will lose it's heat quickly and the steak will stew when it's meant to be cooking...or something like that.

    get a good pan, get it good and HOT, and throw that baby on there. only a couple minutes each side (only turn ONCE). make a fist and feel the fat bit that bulges out between your knuckle at the base of your t-h-u-m-b, (wouldn't let me type t-h-u-m-b - how strange) and the base of your index finger. if your fist is looser,t he fatty bit will feel like a rare steak, a tight fist will have the feel of a well done steak, and in between is medium. so you can feel that fatty bit, then poke your finger into your steak to get an idea (do not cut your steak to see!!!)

    also - when your steak is finished, take it off the heat, cover it with foil and let it rest for a couple minutes - this will re-distribute the juices throughout the meat, (they head for the middle while cooking)

    we always try to bbq, but a good hot frying pan does the trick very nicely as well!
    btw - i must have my steak well done,b ut they always turn out beautifully - not tough at all...but then again, we also buy gooood steak (on sale!)
