I was looking at the bread isle today and noticed the lowest carb bread I have seen yet. It was Schmidt's Old Time Double Fiber Wheat. It's listed as 7g carbs and 5g fiber.

Was it 7 net carbs or just 7 total?
If that info was taken from the bread packaging, then it's 7g total carb and 5g fiber. From the little info I could find online, it appears that this bread is available in a very small area (basically, Maryland, USA). Double Fiber bread by OTHER bakeries is available in most areas of the US, though.
That having been said... it's still not acceptable until you reach Pre-Maintenance or even Maintenance, where whole grains are added. You don't want to just "count the carbs" and think you'll be okay... combining grains with fat is a recipe for weight gain. By the time you're in Maintenance you will be eating less fat than you are now.
To simplify:
Fat + Protein = weight loss
Fat + Carbs = weight gain
