    Excellent taco salad! Induction friendly

    ½ pound ground beef
    1 T onion, chopped
    1 tsp. minced garlic
    ½ tsp. pepper
    1 T green chile sauce (optional)
    Half-bag of Romaine lettuce, set aside in large bowl

    The 3 following ingredients to be added LAST:
    Handful shredded cheddar cheese
    1-2 T sour cream
    2 T tomato sauce (if you choose)

    Brown ground beef on Medium heat - really break it apart! Once this is done, remove from heat,
    drain meat thoroughly, & incorporate the onion, garlic, pepper, tomato sauce, & optional green
    chili sauce - mixing together well. Once combined, add cheddar cheese, & transfer to large salad
    bowl. Finally, add sour cream & serve quickly!

    I'm not midnight eating as I have a habit of doing, so, instead, I'm just "looking" at recipes. lol :P

    But, seriously...this looks delicious and I am totally printing it out and going to make it this week or weekend. Thanks!

    I thought that looked familiar, that recipe is from sugar free sheila's site. Check it out for more good ideas, esp. the pizza!

    I just posted on the "Thousand Island" thread without reading this first...one of our family favorites is to make taco salads very similar to this. Sometimes a little sour cream, sometimes a little bit of avocado. But we make a dressing out of (roughly) equal parts of ranch dressing and salsa. But with salsa, you have to be careful and read the label...many are very sweetened.

    Now that we are well out of tomato season, I can guess that we're not going to be eating them as much.

    By the way, my wife tried a very nice variation on this, but more Greek styled: she made a ground beef (or maybe lamb) mixture with oregano and garlic, and then made a salad base of lettuce, tomato and cucumber. Added feta cheese and some olives. A good dressing might be lemon juice, olive oil and garlic, but we also have a standard trick we do with bottled Greek dressing: we thin it down with red wine vinegar. We learned that trick from a local Greek sub/pizza shop. They do something similar, and add in leftover crumbs of feta they have. It makes an outstanding salad dressing.

    Sounds awesome, I will try it tonight, maybe try shredded chicken thighs or chopped up chicken breast! Thanks for the idea!
