I tried this today, and can i tell you how much I love you for this?!
I did it wrong... read this thread last night, and after the gym today tried to remember the recipe (too hungry to run upstairs to comp).
I messed it up and it came apart (forgot the egg, used too much mayo), but it was still so good! Too moist, but warm, and some parts were crispy... and I drizzled lemon juice over it. SO yummy.
This has saved my life. I'm not much for tuna ON bread, nevermind without it on atkins... but this has changed my mind.

been having these lately with my tomato-asparagus soup (one can of each, blend with a splash of cream, heat...eat!)...but with salmon...either one is yummy tho

I prepared this today and it was delicious. My husband is southern stubborn and like Mikey of the "he won't eat it "commercial BUT he came in at lunch and picked one up, bit into it and said you did these different they are better than the ones you usually fix. I crumbled mine and mixed it with a salad usuing a garlic dressing and my was that ever good.
I have to take the time to try some other recipes from here. Thank you for posting a wonderful recipe.

Sounds like you had a good day weeding and gardening. I love "digging in the dirt" and mowing the lawns and watering etc. It is the kind of exercise I can live with. DUH!

I forgot to add that I did not deep fry-I actually used pan spray. It seemed easier and I am all for easy. I got it crisp on one side and it had stuck just a bit so I gently unstuck it and gently flipped it. Got it crisp on the other side and it was scrumptious.
I've never deep fried them, either... I just use a little EVOO in a frying pan. I like them on a mixed green salad with homemade low sugar 1000 Island dressing (mayo, sf relish and low sugar ketchup).
