    Crispy Tuna Cakes

    1 can white tuna, drained/squeezed dry
    1 egg white
    1 TBS mayo
    1 TBS diced red pepper
    1 TBS diced onion
    healthy sprinkle of lemon pepper

    Stir gently, form into thin patties with a spoon (you CAN with this version) and fry in canola oil until crispy brown on both sides. Makes two 3" cakes.

    I ate this on a bed of mixed baby greens topped with homemade 1000 Island dressing (mayo, low carb ketchup, sf sweet relish).

    I tried this the other day and just ended up with a tuna mess in the frying pan lol I have no idea where I went wrong

    Did you try the one with a whole egg? I did too... that's how I came up with my own version. I only used the egg white and I made sure to really press the water out of the tuna to get it as dry as possible. Cut back on the mayo if it's still too wet. The first ones I made were a sloppy mess, too... and didn't form patties until they were cooked. I had to spoon it into the hot oil and keep pulling the sides in to keep the shape.

    That'll teach me for not reading the receipe properly I'll try again with just the egg white, what could I use the egg yolks for?

    The original recipe called for one whole egg... because it was too runny I made up a different version using just the white. You didn't do anything wrong!

    I gave the yolk to my dogs in their food. The cat wasn't around or she would have gotten it. lol

    you could use the yolk for a quick egg custard (i posted this recipe some time back), a richer omelette or for making homemade mayonaise. Yum...the yolk is the best part!! 8)

    Good recipe, they came out grilled perfectly with a slightly crispy crust.

    I liked Shei's idea of including a picture with a recipe, so when I had this today I took a picture. Not great quality... unfortunately. Next time I'll take another one and see if I can do better. I'm putting the picture with the recipe in the first post of this thread.

    These were great! Next time I may use egg forms (the rings you use to make the eggs perfectly round) to help keep the patty shape. Thanks for the recipe!!

    I just dump the whole thing into a hot (oiled) pan and then pat it and form it into a circle with a spatula. You can pull the sides in to make it a uniform thickness.

    One thing, be sure to SQUEEZE the water out of the tuna. You want it bone dry.

    I had hardly anything in the house to make dinner with, but I had most of these ingredients and made it with capsicum instead of a red pepper.

    Added some cumin and chilli powder (had no lemon pepper), it was awesome. Thanks for the recipe, I would have gone hungry!

    This recipe is definitely adaptable! Just start with a can of tuna and an egg white... add whatever your have on hand or like. You could probably use sour cream instead of mayo... or not use any. I subbed green onion for the white onion and it was good. Black olives or capers would be something I'd try different. The thing I like about these is that it's canned tuna, so it's easy and available at a moment's notice, but it's not another scoop of tuna salad, ya know?

    Just tried this and it was delicious!

    My husband proposed a version for him: Add cheese! lol

    I bet I could add some shreds or just top it with cheese while it was still hot...
