Pork Rinds?

    Pork Rinds?

    I bought some pork rinds when i was at the supermarket, they taste SO naughty!! I recall seeing some recipes where they were used but now for the life of me cant find any..

    Any suggestions on how to incorporate these into a recipe as i just cant stand to eat them on their own!!

    I've bought pork rinds 2x now and don't see what the fuss is about. They are like eating bricks (with about as much flavor). I've tried eating them plain and dipping them in salsa.

    I've never eaten a brick, but I find the pork rinds delicious. Perhaps it is the brand you use. Mine are made by Old Dutch and are called "Bac'n Puffs". They are nice and light and puffy. Here is a fabulous recipe using them to make pancakes.
    2 eggs
    1/4 cup heavy cream
    1/2 of a 3-oz bag of unflavored pork rinds
    3 packets of Splenda (or other sugar alternative)
    1/2 teaspoon cinnamon
    1 dash nutmeg
    Crumble pork rinds until they resemble bread crumbs.

    In a seperate bowl, beat eggs until frothy then add remaining ingredients and continue to beat until well mixed. Add pork rinds to the egg/cream mixture and set aside for 5 minutes to allow batter to thicken.

    Cook on a lightly greased skillet as you would any pancake recipe. Drop batter on surface large spoonfulls. Cook until each side is lightly browned.

    Serve with butter and a low-carb store bought syrup. Or for an interesting low-carb topping, mix 1 Tablespoon of sugar-free jam with 1 and 1/2 Tablespoons water and microwave for 45 seconds.

    I've not seen any that were light and puffy. I think I they were Golden Flake brand? They looked light but biting them was hard.

    i've eaten bricks before and they taste better than pork rinds.

    Can pork rinds be eaten on Induction? I am so wanting a salty snack.

    yes pork rinds can be eaten during induction,,, however try to buy the ones that are 0 in carbs ... i always go for the hot and spicy ones and they are carb free :P
