Baked Pesto Chicken
"Store-bought pesto and mozzarella cheese are all it takes to turn tender chicken breasts into an incredibly easy-to-make dish that will likely become a new family favorite."
4 (6 oz) boneless chicken breasts
1/2 cup pesto (from a jar)
2 ounces shredded mozzarella cheese (1/2 cup)
salt and freshly grated black pepper
Heat oven to 375º.
Season chicken with salt and pepper. Spread 1/4 cup of the pesto in a 9X13" baking dish. Lay chicken breasts over pesto in an even layer and spread with remaining pesto.
Cover baking dish with foil and bake chicken until cooked through, 20 - 25 minutes. Uncover and top with cheese. Bake until cheese is melted, 5 mintues more. Serve hot.
Make 4 servings
Nutrition: 390 calories, 20g fat, 46g protein, 2g carb.
My family loves this! I'll add a salad and for them, linguini tossed with more pesto. It's a complete meal that's easy for all of us to enjoy. |

I love this... but then, dh says I'd eat a dog turd if it had pesto on it. LOL
Speaking of pesto... another good dish it to take really thick steaks and with a narrow sharp knife cut a slit and open up a pocket in the middle of the steak (cut on one side, use the tip to open up a pocket, being careful to not cut through to the outside). With your fingers STUFF the hole with pesto. Grill or fry or broil it... it's OMG good!!
Veggies roasted in pesto are wonderful. Just stir a bit of pesto into a bowl of mixed veggies... pour onto a baking pan a roast in a hot oven. YUM!
I bet pesto would be good in faux potatoes... hmmm...
Ok... just set off a pesto craving here!!!  |
