I came across these not too long ago because we needed an alternative to cake for a birthday.
It's one softened 8 oz package of cream cheese,
1/2 cup of peanutbutter (I use creamy natural peanut butter that's just peanuts and salt),
1/4 cup splenda or sweetener equivelant,
a teaspoon of vanilla,
and 1/2 teaspoon of cinnamon.
Blend it together and refrigerate then roll into balls by the spoonful. I finished mine by rolling them in a little bit of almond meal to keep them from sticking to everything, but you could use some flax seed meal or unsweetened cocoa for a chocolate fix. It's not induction friendly, but it does taste pretty good. I'm freezing a couple to try them that way. I'll let you know how that turns out. |

Your recipe has a total of nearly 35 grams of carbohydrate (depends on the vanilla and pnb you use). How many servings do you get from one recipe??? |

you get lots and lots of little balls - unless you go wild and make BIG balls
i've made these before, but i really *really* don't like (added) AS in desserts so i have only made them once or twice. i know the recipe though, and one or 2 little ballies is probably enough

I made about 30 tiny balls so it's a little over a gram of carbs apiece. And my rule is two per day, period. So less than three grams. But just like any sweet, it's a treat, and NOT something that I advocate eating every day. But they still beat the heck out of cake, pie or cookies when you want something different. |
