A low carb one? Not sure that's possible..
As a cake substitute I like to make a sf gelatin mold, turn it out, top with fresh whipped cream and candles! It's fun to use different flavors and layer them... like all citrus; lemon, lime and orange. Or all berry; raspberry, strawberry, cranberry. Of go for color... layering colors that match a theme or your decorations... like grape and lemon (purple and yellow), lime and strawberry (red and green), etc.
If you're in OWL and have added berries to your diet, you can top this with raspberries, strawberries or blueberries. Use whole strawberries as candle holders... It's not CAKE, but it's special and it's GOOD AND it's low carb.  |

Just repeat, "I do not eat cake...I do not eat cake...I do not eat cake."
I plan to say that to myself forever...when you get down to it, who needs it?
That is the only way, for me, that I will not slip back into my old ways.
Later on you can make a killer pumpkin pie or coconut cream pie with a flax crust! And cheesecake! So do not despair, but cake is white flour and it is NOT something I plan on going back to.
At least, I surely hope that will be my attitude going forward.
