I made this for myself and my daughter for lunch today and loved it!
This is for 2 servings, but its easily halved.
Drain 2 cans of tuna, add enough mayo to make it stick together well.
Form tuna into 2 patties (like hamburgers).
Measure out 1/4 cup Sun-Dried Tomato Pesto, 1/8 cup for each patty.
Spread pesto sauce on top of each patty.
Top patties with a slice of cheese. (I used extra sharp cheddar with less than 1 carb per oz.)
Put patties in broiler (great to have a toaster oven) and broil until cheese is melted.
Enjoy!
I found the pesto sauce to be a bit salty and could be reduced a little bit (which would also reduce the total carb count), but I rather liked the little indulgence there. I did find this meal to be a good lunch. Just filling enough, not to heavy or light.
Here's how I broke this down per serving:
Tuna - 0
Mayo - 0
Pesto - 3.5 (8 carbs per 1/4 cup - 1g fiber = 7 net carbs, which is 3.5g per 1/8 cup)
cheese - 1
Total = 4.5 carbs per serving
I also added a stalk of celery with 1 oz of cream cheese on the side.

hello.i made these today, the taste was very nice.
But my burger fell apart, it didnt stick together. r u supposd to put egg or egg white in it? |
