So let's play a game... who's willing?

The game will be... an alphabet game. Beginning with the letter "A" I'll post a Atkins acceptable food. The next person can post a "B" food, etc. Let's see how far we can get!

N - Nopales (Mexican - NO-PALL-ESS) prickley pear cactus, only 2 grams per serving of 1 cup - great with pork stew and tomatoes!)

Who would have thunk that the ugly prickley pear cactus you can even find here in Richmond, VA would be SO GOOD peeled, cubed and simmered with pork, spices and tomatoes.

In LA, where I used to work, my Hispanic friends would share Mom's recipe. Yummy!
